Breakfast Egg Bake Recipe

If you love simple, high‑protein breakfasts you can prep ahead, this easy breakfast bake is perfect. I make 6 servings to use the entire 16 oz package of breakfast turkey sausage. Each serving is loaded with flavor, balanced ingredients, and takes just a few minutes to throw together before baking.

What Goes Into Each Serving

  • 1/3 cup pepper & onion mix

  • 1/2 cup egg whites

  • 1 tablespoon chopped bacon

  • 1/8 cup shredded cheese (Colby Jack or Mexican blend both work great)

  • 1/4 cup cottage cheese

  • 1 whole egg

  • 2.6 oz breakfast turkey sausage (about 1/6 of a standard package)

How to Make It

  1. Preheat your oven to 375°F.

  2. Lightly spray glass containers or meal‑prep dishes to prevent sticking.

Here are my favorite glass containers: Meal Prep Containers

  3. Add all ingredients directly into each container.

  4. Mix gently to combine.

  5. Bake for 40 minutes, or until the center is fully set.

Why This Breakfast Works

It’s quick, customizable, and keeps well for grab‑and‑go meals throughout the week. The blend of eggs, sausage, bacon, and cheeses creates a hearty, satisfying texture while the veggies add color and nutrients. Simple, clean, and reliably delicious.
