Why you'll love it

Each bake packs 45 grams of protein from egg whites, whole eggs, cottage cheese and turkey sausage. Crispy diced potatoes and melty cheese make it taste like a diner breakfast.

There's no pan to scrub. Everything goes straight into your glass containers, so you bake, cool and stack them in the fridge.

Ingredients

  • 3 cupsegg whites
  • 6whole eggs
  • 1½ cupscottage cheese
  • 1 packagebreakfast turkey sausage (I use Butterball)
  • 4½ cupsfrozen diced potatoes (I love Ore-Ida Southern Style)
  • 6 tbspchopped bacon
  • ¾ cupshredded Colby Jack or Mexican blend cheese

Instructions

  1. Preheat.Heat the oven to 375°F.
  2. Prep the containers.Lightly spray your glass meal prep containers with cooking spray. I use the larger containers from my meal prep set for this recipe.
  3. Fill.Divide all the ingredients evenly into each container. No need to thaw the potatoes.
  4. Mix.Stir each container gently to combine.
  5. Bake.Bake 40 to 45 minutes, until the center is fully set.
Single serving tip: A food scale makes the sausage easy. Weigh out 2.6 oz, about one sixth of the package.

Storage and reheating

Fridge: Let cool, then seal and refrigerate up to 4 days.

Reheat: Microwave 1 to 2 minutes with the lid cracked, until hot in the center.
